Baked eggs & avocado

Super simple, packed with protein, and extra tasty. These are a breakfast or lunch time life saver…just don’t forget lots of fresh lime!

– Pre-heat oven to 170c
– Halve and de/stone an avocado
– Pop on a baking tray and break a medium egg in to each avocado hole – make the hole a little deeper by scooping out some of the avocado if the eggs won’t fit 
– Put in the oven for 18 mins (or until egg has set)
– Add seasoning & chilli flakes, fresh lime juice & fresh coriander
