This is a delicious, nutritious lunch time snack that’s oh so simple to make…beware though, it’s incredibly moreish and addictive!
1 medium, ripe avocado (peel and de-stone)
1 teaspoon of rose harissa (available in most good supermarkets but if you’d like to make your own, Jamie Oliver has a great recipe on his site here
1 thick slice of sour dough bread
2 tablespoons hummus (if you’d like to make your own, we have a great and simple recipe on our cookery school blog – The Cooking Shed here)
1. Crush the avocado and in a bowl and mix in the rose Harissa i
2. Toast the sour dough both sides, then leave to cool
3. Spread the hummus on the toast, then top with the avocado mix
