Quick and healthy cumin coleslaw


This is so quick and tasty, that I often make myself up a bowl just to eat on its own for lunch. You can play around with using all different types of cabbages, add nuts if you like, or have it with or without the cumin. This is simply how I enjoy it best.



2 x carrots

Quarter of a decent sized white cabbage

Half a red onion

1 tablespoon of 0% fat greek yoghurt

The juice of half of a fresh lime

1 teaspoon of saltanas

half a of teaspoon cumin

Seasalt & black pepper

– makes one large bowl –



1. Roughly chop the cabbage into slicesand add to a large bowl

2. Grate the carrots into the bowl (there’s absolutely no need to bother peeling them if you’ve given them a good wash)

3. Thinly slice the onions and add them to the bowl

4. Add in the lime juice, yoghurt, cumin and season to taste

5. Pop in the saltanas and with your hands, give everything a good mix, ensuring that everything is coated with the yoghurt and juices
