Strawberry ‘without the cheese’ cake

This is a really indulgent dessert that’s fast to make and great for dinner parties. 

 

Ingredients: 
Packet of good quality shortbread (ideally round shortbread biscuits) 

Carte D’or (it’s got to be) vanilla ice cream

500g fresh strawberries 

1 vanilla pod

1 tablespoon golden caster sugar 

2 x caramelised gingers crystal jellies (optional) 

4 tablespoons of Pimms 

– serves 4-

 

Instructions: 

1. remove the tops of the strawberries and cut into quarters. Place in a small saucepan along with the Pimms, sugar, split vanilla pod and ginger crystals. Bring to the boil and then allow to simmer for approx 2 minutes, giving it an occasional stir (don’t lick the spoon, it’s scalding hot!) leave to cool for 1 minute whilst you prepare the rest of the dish

2. When you’re ready to serve, place 1 and a half biscuits into the bottom of a dessert bowl, smash them up a bit and then spoon three large heaps of ice cream into each bowl 

3. Spoon over your hot stawberries and a nice helping of sauce and serve immediately (before the ice cream melts!)
